Well, with Google docs and Etherpad you don’t generally hold a local copy of the document., though you can export one. 

Etherpad is great for editing notes during a meeting, where plain text is all you need; the IETF use it for producing WG notes/minutes for example, and I use it for the UKNOF programme committee meetings and meeting arrangements.

Google docs is a little fancier.

DropBox is more about managing your own archive of files, photos, whatever, and accessing them on any device, easily.
