It also looks like direct adapters exist, is there a reason not to use one of those?

You can get from USB-C to HDMI very easily (Apple will sell you a big expensive adapter to do this, there are cheaper non-Apple ones).
That gives you female HDMI.

You then connect that to a mini-DisplayPort female to female coupler, which also does exist:

to which you plug in the cable from your Apple Cinema Display.
Being an engineer, I'm *not* going to guarantee that will work, as it's an Apple display which might decide it's not going to put up with anything other than a Mac's mini-DisplayPort/Thunderbolt socket on the end of its cable (Remember many Apple cables have embedded DRM).
But it's definitely worth a shot!
