Google docs offline only works in Chrome as far as I know.
I agree with Les incidentally, the latest version of Excel is horribly buggy, and has some back-compatibility problems. I’m using a mix of Google Sheets and Excel ’11. When support for Excel ’11 stops I’ll probably move 100% to Google Sheets, or a successor - unless the new Excel gets fixed.
