Downgrading isn't really non-trivial, but is quite straightforward nowadays. There are numerous tutorials on the internet on how to do it such as: http://www.iphonedownloadblog.com/2010/06/28/how-to-downgrade-your-iphone-from-ios-4-to-3-1-3/
I put the iOS 4 beta on my iPhone 3G, and pretty quickly downgraded it back. Other than Folders and Unified Inbox, it doesn't really get an new features. No background apps, not even homescreen wallpaper. It did seem to be even more sluggish launching apps, which was why I put 3.1.3 back.
