1. where are the "column to be shown“ in the search-result-tables defined?
items_fields are part of user's standard fields, i.e. could be controlled via
user_fields_automatic.pl, user_fields_default.pl respectively (the former, depending on your intention ...).

2. how can a user get, or being given by „Admin", the "default-column-view“ again?
manually, or after a modified import of an export of user's entry from console
