[EP-tech] Citation on raw db-field value?!

The as_string(<value>) method will output the raw value of a field
rather than the rendered version.
There's also a substr(<value>,<offset>,<length>) which may prove useful
here.
Not all the methods got documented on

method names, at least, as the run_METHOD subs in
<https://github.com/eprints/eprints/blob/3.3/perl_lib/EPrints/Script/Compiled.pm>
