What you need to do is write an exporter
In essence, what you do is write a variation on
~~~/perl_lib/EPrints/Plugin/Export/BibTeX.pm (or ~~~~/DC.pm, or Text.pm) 
but creates a .csv file (or a tab-separated file)

Either build the lines up by hand, or use something like Text::CSV::Easy

(Sorry, there's no easy read-written solution for you)
