[EP-tech] Problem adding fields to EPrints via GUI

I've been trying to manage some metadata fields through the GUI, but keep getting a system error.
I've just tried it on the demoprints site and the same error occurs.

This is how to recreate the issue on Demoprints:

1) Log in (with an admin account)
2) Go to: Admin -> Config tools -> Manage Metadata Fields
3) For a dataset (e.g. eprints), click 'View Dataset Fields', and then 'Create a field'
4) System Error
This also makes the 'View dataset Fields' screen broken for that dataset.

How should this be fixed?
